baked banana and blueberry oatmeal

I finally got my baking on! I really can’t tell you the last time I baked a sweet treat and that’s probably because I don’t eat sweets a lot. Since eating healthier and losing weight, the only sugar I love to eat is the good old natural kind from fruits.

But nature intervenes! Last night, I noticed that my bananas, which are my favorite fruit, were getting pretty brown. That’s what you get when you go overboard and buy two bunches of them. We also picked up blueberries, which are L’s favorite fruit, and I had oatmeal sitting around.

Luckily, one of my favorite healthy food blogs had the perfect recipe!

kiwi berries

During my juice fast, I did a lot of research on fruits and veggies and their nutritional values. I wanted to know exactly what I was putting into my body.

I ended up juicing a lot of kiwis. The main reason was for Vitamin C. Surprisingly, these hairy little guys contain more Vitamin C than oranges. Kiwis are also a good source of Vitamin A and E. In other words, kiwis will help boost your immune system and also protect you from free radicals in your body which can cause damage to cells.

green juice

In January, I went on a 5 day juice fast feast. It was my first time so the 5 days seemed to drag on forever. Last month, I completed a 15 day juice feast! It was an incredible experience and the second round was a lot easier than the first.

Even though I’m back to eating healthy foods, I still love to juice every morning for breakfast. I also tend to juice more frequently during the weekends and last Saturday was the perfect day for juicing.

With the temperature in the 60s and a hint of spring in the air, juicing for two meals was the perfect way to give my digestion system a break and give my body an energy boost to enjoy the first perfect Minnesota Saturday. Here’s to more gorgeous weather coming our way this week!
